Thompson Brothers BBQ Ribs
One of my favorite lunch destinations is Thompson Brothers BBQ on Cobb Parkway in Smyrna, GA. I keep going back for their ribs and usually order the rib sandwich.
The rib sandwich is served with two slices of white bread. Unlike a traditional sandwich where the bread acts as bookends, the bread in the Thompson Brothers rib sandwich is more like a mattress. If the ribs are small they will typically serve four of ’em and if they’re big ribs then 3 ribs.
These are ribs for grown-ups. These ribs have more meat than fat and no sugary sauces are applied – thank you Thompson brothers. One thing I really enjoy about the ribs is the thin meat crust that forms on the outside of the ribs. Under the outer layer you’ll find tender juicy rib meat.
The sauces at Thompson Brothers are ok, but not spectacular. The best sauce is a spicy sauce that’s not normally available on the tables, just ask for it at the counter. My recommendation is to skip the sauces and just enjoy the great smokey flavor of the ribs.
I got a quick VIP tour and was shown the smoker behind the restaurant. Smoke poured out when the doors were opened – It’s the real deal.
Thompson Brothers, as the name implies, is a family run restaurant and it shows in the good customer service you’ll find.
My favorite side are the collard greens, mostly because they don’t distract from the ribs. I’ve also had the beans which taste homemade, sweet with a little bite and well above average for BBQ beans. They also serve homemade pound cake made fresh every morning.
